Vegetable Chicken Soup – Recipe!

I’ve never made a soup before tonight, and it honestly turned out wonderful! It not only tastes delicious, but is healthy and filled with so many great vegetables. Here is the recipe.

Ingredients

  • 2 cups chicken stock
  • 7 cups water
  • 4 Yukon gold potatoes washed and chopped
  • 1/2 Zucchini chopped
  • 1/2 cup cabbage diced
  • 2 celery stalks diced
  • 1/4 cup onion diced
  • 1 cooked and seasoned chicken breast shredded
  • 1 cup fresh spinach
  • 1/4 tsp garlic powder
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • Dash oregano, basil, Italian seasoning
  • 1/4 tsp soy sauce
  • 2 cups whole wheat pasta

Directions

Start with a large sauce pan. Combine chicken stalk and water in pan and bring to a low boil. Add potatoes, zucchini, cabbage, celery, onion, chicken breast, and spinach to pan. Cook for 10 minutes stirring occasionally. Add garlic, pepper, salt, oregano, basil, Italian seasoning, and soy sauce. Stir in. Continue cooking  for another 15 minutes or until veggies and potatoes begin to soften. Add the pasta, cook until pasta is tender. Remove from heat and serve immediately, or put into a Tupperware and store in the fridge.
